Description

A delicious twist on traditional Mexican Street Corn, this dish combines succulent shrimp with sweet corn and a creamy sauce for an irresistible flavor explosion.


Ingredients

  • 2 cups corn (fresh or frozen)
  • 1 lb shrimp (peeled and deveined)
  • 1/2 cup feta cheese (crumbled)
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 2 cloves garlic (minced)
  • 2 tablespoons cilantro (chopped)
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the garlic and cook until fragrant.
  3. Add the shrimp, season with salt, pepper, and chili powder, and cook until shrimp are pink and cooked through.
  4. Stir in the corn and cook until heated through.
  5. In a separate bowl, mix feta cheese, sour cream, mayonnaise, lime juice, and cilantro to create the creamy sauce.
  6. Pour the sauce over the shrimp and corn mixture, and stir to combine.
