Instructions
- Wash the cucumbers thoroughly under running water.
- Slice the cucumbers into thin rounds or matchsticks, depending on your preference.
- Roast the peanuts in a dry skillet over medium heat for 3-5 minutes until golden and fragrant.
- Combine the soy sauce, peanut butter, rice vinegar, honey (or sugar substitute), minced garlic, and chili flakes in a mixing bowl.
- Whisk the ingredients together until smooth and well blended.
- Add the sliced cucumbers to the mixing bowl, tossing gently to coat them in the peanut sauce.
