Description

Ingredients

  • 1 cup grated zucchini
  • 1 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. Combine peanut butter, brown sugar, and granulated sugar in a mixing bowl. Mix until smooth.
  3. Add the eggs and vanilla extract, and mix well.
  4. Fold in the grated zucchini.
  5. Whisk together flour, baking soda, baking powder, and salt in another bowl. Gradually add to the wet mixture, stirring until combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
