Description

A comforting and simple Oyster Mushroom Pasta dish that marries the delicate flavor of oyster mushrooms with comforting pasta, perfect for weeknight dinners.

Ingredients

Scale
  • 8 ounces pasta (e.g., spaghetti or fettuccine)
  • 1 cup oyster mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: protein (chickpeas, tofu, or chicken)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat a large skillet over medium heat and add olive oil.
  3. Add minced garlic and sauté until fragrant.
  4. Stir in the sliced oyster mushrooms and cook until they are tender and slightly browned.
  5. Pour in the vegetable broth and bring to a simmer. Season with salt and pepper.
  6. Toss the cooked pasta into the skillet and combine, allowing the pasta to absorb some of the sauce.
  7. If using, add the protein of your choice and stir until heated through.
  8. Serve hot, garnished with fresh parsley.

Notes

Use fresh ingredients for the best flavor. Be mindful not to overcook the pasta or mushrooms.
