- 1 cup powdered sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup cornstarch
- 1 teaspoon baking powder

- 1 cup dulce de leche
- Cocoa powder or shredded coconut for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Add in the egg yolks and vanilla extract, mixing until well combined.
- Whisk together the flour, cornstarch, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet mixture, stirring until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet, flattening them slightly.
- Bake in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on a wire rack.
- Spread dulce de leche on the flat side of one cookie, then top with another cookie to create a sandwich.
- Optionally, dust the cookies with cocoa powder or shredded coconut before serving.
