Description

A refreshing and tangy salad that highlights crisp cucumbers and sweet onions, perfect for summer picnics and family gatherings.


Ingredients

Scale
  • 4 medium cucumbers, peeled and thinly sliced
  • 1 Vidalia onion, thinly sliced
  • 1/2 cup water
  • 2 cups white wine vinegar (or apple cider vinegar)
  • 1/4 cup granulated monk fruit sweetener (or sugar)
  • Salt and pepper to taste


Instructions

  1. Mix the water, white vinegar, and monk fruit sweetener until the sweetener is completely dissolved.
  2. Season with salt and pepper to taste.
  3. Combine the cucumber slices and onion slices in a large bowl or jar.
  4. Pour the dressing over the cucumber and onion mixture.
  5. Toss everything together until the cucumbers and onions are well coated with the dressing.
  6. Cover the bowl and let the salad marinate in the refrigerator for at least 60 minutes before serving.
  7. Adjust the seasoning and sweetness to your preference.

Notes

This salad is best enjoyed cold and can be stored in the fridge for up to 4 days. For added flavor, experiment with fresh herbs or a pinch of red pepper flakes.
