Description

A vibrant mixture of sweet corn, spicy jalapeño, and tangy lime for a refreshing dip or condiment.


Ingredients

Scale
  • 4 ears of sweet corn, husked
  • 1 jalapeño, diced
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 teaspoon Tajín seasoning
  • Salt to taste
  • Chopped cilantro (optional)


Instructions

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Place the corn on the grill and roast, turning occasionally, until charred and golden (about 10-15 minutes).
  3. Once charred, let the corn cool slightly.
  4. Cut the kernels off the cob and place them in a bowl.
  5. Add the diced jalapeño, minced garlic, lime juice, Tajín, and salt. Stir until well combined.
  6. Optionally, add chopped cilantro for garnish.
  7. Serve with chips, over tacos, or alongside grilled meats or seafood.

Notes

Chill before serving for best flavor; adjust lime and Tajín to taste.
