- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup chocolate chips or sprinkles
- 2 cups ice cream (flavor of your choice)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar in a large bowl until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Mix together the flour, baking soda, and salt in another bowl. Gradually blend the dry ingredients into the wet mixture.
- Fold in the chocolate chips or sprinkles.
- Drop spoonfuls of dough onto baking sheets lined with parchment paper, spacing them apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow cookies to cool completely on a wire rack.
- Scoop ice cream onto the flat side of one cookie, sandwich it with another cookie, and gently press together.
- Wrap each sandwich in plastic wrap and freeze until firm.
Notes
Chill your cookie dough before baking for thicker cookies. Use a cookie scoop for uniform sizes.
