Description

A delightful combination of ripe bananas and creamy peanut butter, these cookies are soft, chewy, and perfect for any occasion.


Ingredients

  • 2 ripe bananas
  • 1 cup peanut butter (smooth or crunchy)
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • Optional: chocolate chips or chopped nuts


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Mash the ripe bananas in a bowl until smooth.
  4. Add the peanut butter and mix until well combined.
  5. Stir in the brown sugar and vanilla extract.
  6. Sprinkle the baking soda and salt over the mixture.
  7. Fold in the all-purpose flour until just combined.
  8. If desired, fold in chocolate chips or chopped nuts for extra flavor.
  9. Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes or until lightly golden.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, remove them from the oven when they still look slightly underbaked; they’ll continue to firm up as they cool.
