- 2 ripe bananas
- 1 cup peanut butter (smooth or crunchy)
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup all-purpose flour
- Optional: chocolate chips or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mash the ripe bananas in a bowl until smooth.
- Add the peanut butter and mix until well combined.
- Stir in the brown sugar and vanilla extract.
- Sprinkle the baking soda and salt over the mixture.
- Fold in the all-purpose flour until just combined.
- If desired, fold in chocolate chips or chopped nuts for extra flavor.
- Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For softer cookies, remove them from the oven when they still look slightly underbaked; they’ll continue to firm up as they cool.
