Description

Delightful apple cider cookies that capture the essence of autumn with warm spices and fresh apples.


Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 1–2 tbsp apple cider (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Add egg, vanilla, and apple cider; mix until smooth.
  4. Whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add dry ingredients to wet and mix until combined.
  6. Fold in diced apples gently with a spatula.
  7. Scoop dough onto the baking sheet and bake 10–12 minutes.
  8. Let cookies cool, then drizzle with apple cider glaze.

Notes

Chill the dough for at least 30 minutes for better texture. Store cookies in an airtight container for up to a week.
