Description

Ingredients

  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)


Instructions

  1. In a large pot, combine the rice, black beans, corn, diced tomatoes, vegetable broth, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  4. If using, sprinkle the shredded cheese on top, cover, and let it melt for a few minutes.
