- 1 cup long-grain rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, combine the rice, black beans, corn, diced tomatoes, vegetable broth, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- If using, sprinkle the shredded cheese on top, cover, and let it melt for a few minutes.
- Serve hot and enjoy your meal!
