Description

A classic comfort food from Minnesota, this Tater Tot Hotdish combines ground beef, vegetables, and creamy soup topped with crispy tater tots.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 bag (32 oz) tater tots
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef and onion over medium heat until the meat is cooked through.
  3. Stir in the mixed vegetables and cook for an additional 5 minutes.
  4. Add the cream of mushroom soup and mix well. Season with salt and pepper.
  5. Transfer the beef mixture to a 9×13 inch baking dish.
  6. Sprinkle the shredded cheddar cheese over the beef mixture.
  7. Top with an even layer of tater tots.
  8. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
