Description

A delicious and healthy Mediterranean-inspired dish featuring salmon and lemon-infused rice.


Ingredients

  • 2 salmon fillets
  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, heat olive oil over medium heat and add the rice, stirring for 2 minutes.
  3. Add the vegetable broth, lemon juice, and zest to the rice, then bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  5. While the rice is cooking, season the salmon fillets with oregano, salt, and pepper.
  6. Place the salmon on a baking sheet and bake for 12-15 minutes until cooked through.
  7. Fluff the rice with a fork and serve topped with the baked salmon and fresh parsley.

Notes

  • For added flavor, marinate the salmon in lemon juice and herbs for 30 minutes before cooking.
