Ingredients

- 2 salmon fillets
- 1 cup basmati rice
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, heat olive oil over medium heat and add the rice, stirring for 2 minutes.
- Add the vegetable broth, lemon juice, and zest to the rice, then bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
- While the rice is cooking, season the salmon fillets with oregano, salt, and pepper.
- Place the salmon on a baking sheet and bake for 12-15 minutes until cooked through.
- Fluff the rice with a fork and serve topped with the baked salmon and fresh parsley.
Notes
- For added flavor, marinate the salmon in lemon juice and herbs for 30 minutes before cooking.
- Serve with a side of steamed vegetables for a complete meal.
