Instructions
- In a microwave-safe bowl, melt the white chocolate chips until smooth.
- In a separate bowl, mix the cream cheese, key lime juice, key lime zest, and powdered sugar until well combined.
- Fold the melted white chocolate into the cream cheese mixture until fully incorporated.
- Chill the mixture in the refrigerator for about 30 minutes until firm.
- Once chilled, scoop out small portions and roll them into balls.
- Roll the truffles in graham cracker crumbs to coat.
- Place the truffles on a baking sheet and refrigerate until set.
Notes
- For a stronger lime flavor, add more key lime zest.
