- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup heavy cream
- 4 tablespoons butter
- 1 pound carrots, peeled and cut into sticks
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Coat the chicken breasts with the herb mixture and place them in a baking dish.
- Arrange the carrots around the chicken and drizzle with olive oil, salt, and pepper.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add heavy cream and butter, then mash until creamy.
- Serve the chicken with creamy mash and roasted carrots on the side.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- Feel free to add other vegetables to roast alongside the carrots.
