Description

A delicious and comforting dish featuring garlic herb chicken served with creamy mashed potatoes and roasted carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 pound carrots, peeled and cut into sticks


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Coat the chicken breasts with the herb mixture and place them in a baking dish.
  4. Arrange the carrots around the chicken and drizzle with olive oil, salt, and pepper.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
  7. Drain the potatoes and return them to the pot. Add heavy cream and butter, then mash until creamy.
  8. Serve the chicken with creamy mash and roasted carrots on the side.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
  • Feel free to add other vegetables to roast alongside the carrots.
