Description

A delicious and hearty chili made with turkey and pumpkin, perfect for fall.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until softened.
  2. Add the ground turkey and cook until browned.
  3. Stir in the pumpkin puree, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and black pepper.
  4. Bring the mixture to a simmer and let it cook for about 20 minutes.
  5. Stir in the heavy cream and cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier chili, add diced jalapeños or cayenne pepper.
  • This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Leftovers can be frozen for up to 3 months.
