Description

A light and fluffy cloud bread made with cottage cheese and blueberries.


Ingredients

Scale
  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh blueberries
  • 1 tablespoon honey (optional)
  • Pinch of salt


Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs, and blend until smooth.
  3. Add the almond flour, baking powder, and salt to the mixture, and stir until well combined.
  4. Gently fold in the blueberries and honey if using.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, forming cloud-like shapes.
  6. Bake for 25-30 minutes or until golden brown and set.
  7. Allow to cool slightly before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • Can be served with additional honey or yogurt.
